Knöpfli / Spätzli

We had a treat for dinner tonight!  Marianne taught us how to make one of her family's favorite dishes from Switzerland...Knöpfli.  We all enjoyed it with a bit of gravy, some cabbage from our CSA and a few meatballs...especially Violet!

The recipe we used here serves about 4 people:

4 cups flour (white or a mix)
1 tsp salt
nutmeg
4 eggs, beaten
1 cup warm water/milk mix
1 TBL oil

Mix dry ingredients in a bowl.  Make a well and add the wet ingredients and mix well.  Chill dough 30 minutes.  Push dough through a colander into a pot of boiling water.  Boil them 5 minutes.  (Knöpfli is made with a colander, Spätzli is scraped into the pot with a knife and is bigger)  Remove with a slotted spoon and drain.  (You can freeze them at this point)  Fry in a pan with oil until lightly browned.  ENJOY!
