Rainbow Pancakes

Everyone was up BRIGHT AND EARLY this morning, so we decided to let Daddy sleep in a bit while we made a special breakfast.  Everyone voted for pancakes, but we kicked it up a notch and made RAINBOW pancakes.  You can use whatever pancake recipe you like but here is the recipe that we used.  This much batter made 4 stacks of rainbow pancakes plus a baby stack for Beatrice.

Whisk together:


  • 3 cups all-purpose flour
  • 7 teaspoons baking powder
  • 2 teaspoons salt
  • 2 tablespoons white sugar
  • 2 1/2 cups milk
  • eggs
  • 3 tablespoons butter, melted



Split into 6 bowls, add a rainbow color to each bowl (fun with color mixing!!)

Cook up the pancakes on the griddle.  If you cook them a bit longer than you usually would on the first side, the second side can just cook for a few seconds and the color will be more vibrant (and less browned).  Stack them up in ROY G BIV order and enjoy your rainbow panckes with butter, syrup, powdered sugar or whatever strikes your fancy!
